Pickling Fiend

All my pickling endeavors for this year have come to a close. I think we ended up doing pretty well for our first year. We have a cupboard filled with quart and pint jars of pickles. I think we did about 5 or 6 different pickling batches, and they were all successful except for the first one. They just tasted like bad vinegar. Also, they were all done as spears because we let the cucumbers get bigger than I wanted. The best pickles were made from the cucumbers that were picked when they were still small, finger sized.

We also made some pickled dill beans, which we bought from the Huterites, kind of like Mennonites, they turned out great. I made a quart of pickled eggs, but we didn’t really like them. It could be because we didn’t make them very well, or because we don’t really like pickled eggs. I think the only other time I’ve actually had a pickled egg was in Mr. Gregory’s Sunday School class maybe 15 years ago or something.
